Vegetable Puff ( Capsicum And Onion Filling )


          My daughter likes puffs, this is the first time I made them at home, from scratch, of course I used to make them in the US, where readymade puff pastry was available, but after coming to India, this is the first time. Well, making puff pastry from scratch is a little time consuming, so when I made them for my Eggless Baking Challenge, I had saved some for making these puffs. We can make so many fillings, either sweet or savory, I have used sauteed red capsicum and onion filling, topped with some cheese, the puffs turned out absolutely delicious..

Need To Have

  • Puff Pastry - Store bought or homemade, I have used 1/3rd of the puff pastry that I had prepared here from 1 cup flour
  • Onions - 2 medium, sliced finely
  • Red Capsicum - 1 small, sliced
  • Red Chilly Powder - 1/2 teaspoon
  • Garlic - 3 cloves, chopped
  • Dry Basil - 1 teaspoon
  • Parmesan Cheese - 3 teaspoons
  • Salt to taste

Method


          Heat some oil, add the chopped garlic and onions and saute till the onions turn pink, then add the capsicum, chilly powder and salt and keep sauteing on reduced heat, till the capsicum is cooked. Add the basil, mix and remove and let it cool a little.


          Take the puff pastry, dusting some flour, roll out the pastry and divide into 3 parts.


          Place the capsicum mixture, spread 1 teaspoon of the parmesan cheese, fold the pastry sheet and seal it, and make small slits on the top with a fork.


          Bake it at 190 C for 20 minutes and remove.


Note
Oven timing varies, bake the puffs, till they turn golden.
